Eat Real Food Challenge, Day 8
Yawwwwn! A quick update before beddy bye time.
Breakfast: buckwheat pancakes, courtest of Bob’s Red Mill mix. I think these are my favorite pancakes! They can stand all on their own, as far as I’m concerned. I’ve always wanted to try buckwheat pancakes after reading about them in the “Little House on the Prairie” books. Also, coffee and orange juice. It’s possible that I’ve cheated since the orange juice was made from frozen concentrate but the ingredient is just orange juice and nothing more, so I deem that okay.
Lunch: another salmon patty with absolutely nothing on it but some salt and pepper. I also made the barley salad that I mentioned in my post about my favorite recipes, had a bowl of that.
Dinner: I made the corn tortillas! I mixed up the dough, made little dough balls, then rolled them out in between two sheets of plastic wrap with a pint glass, since I don’t own a rolling pin. The first two were pretty thin and falling apart when I peeled them off the plastic. I became frustrated until Barrett handed me a beer bottle to roll with instead and I decided to not make them so thin or large; plus, I stopped using the top plastic wrap sheet. Then they turned out just fine! Barrett cooked them on the grill as I made them. Afterwards, we made some tostada stacks, modeling after a recipe on Sher’s blog. But we didn’t make that particular recipe at all, we just followed her oven instructions. We laid out five tortillas on a baking sheet after frying them in a bit of oil to make them crunchy, glopped on a bean mixture with tomatoes, cheese, scallions, and cilantro, laid another tortilla on top of each, then covered that layer with a bit more beans, avocado, and lots more cheese. We baked them in the oven until melty. Ohhhh man, were they good! They were food coma-inducing good!
I may invest in a tortilla press to save time. I do like making my own tortillas!

Ohh I want pictures! Sounds really amazing. I salute your inventiveness.
It’s amazing how you can cure frustration by handing someone a beer bottle. What’s even more amazing is if it’s an empty bottle.
Man. It totally can’t be understated how much homemade corn tortillas kill those rubbery store bought ones. So good. Leave yourself a lot of time though!!!
