Eat Real Food Challenge, Day 13

Another update the day after. I’ve made the decision that I will stick to blogging for the whole two weeks only, which means today, Saturday, will be the last Challenge day I blog about. But I’m going to continue to do this hardcore until the end of February, and then put much of what I am doing into daily practice. Okay, Friday’s meals:

Breakfast: corn grits, no butter this time with it, just salt; coffee with cream. I will say here that I have switched to regular half and half for the coffee and cooking because full “whipping” cream really isn’t necessary. Half and half is just cream and milk combined and I think G-G-Grandma would approve of that. There’s certainly nothing artificial about it.

Lunch: defrosted some more shrimp & salted/peppered it, packed it into a container with the last cupful of the barley salad; I brought some cheese but didn’t eat it, I just now remembered! What else did I have? Oh, a small banana. And I bought a delicious but ginormous peanut butter cookie from the organic bakery in the Pike Place Market–they list their ingredients out for each baked good, so I knew it was from scratch. I only ate a fourth of it, put the rest out for coworkers, announcing that it was “Peanut Butter Cookie Friday!”

Dinner: finally made the Swedish salmon-lemon zest dish on top of spinach noodles. Had a couple of glasses of the yummy Mad Housewife Chardonnay with some popcorn while Barrett and I watched the “Jesus Camp” documentary. Scary!

    No butter on the corn grits! WOW!!! That’s hard core! :):) I love corn grits–they are the best. I think you are doing just fabulous! I’ve enjoyed reading all your posts! Well done!!!!
